The trade-off: No transparency support, and every re-save removes a little more quality. Text and hard edges develop visible "mosquito" artifacts faster than photographic detail does. Only 256 colors produce banding on photos, animations cannot exceed a fraction of a second smoothly, and file sizes are large for their visual quality.
One more consideration: JPEG is tuned for photographic imagery full of gradients and fine detail, while GIF performs best on graphics with flat colors, hard edges, or limited palettes. Moving a photograph into the graphic-oriented format tends to look worse per byte than staying in the photo-oriented one.

Tips for a clean JPEG → GIF conversion
